This is one of my favorite healthy, hearty, easy-to-prep soups!
You’ll need:
1 package of kielbasa sausage, roughly one pound, sliced into bite-size pieces
2 T olive oil
1 large leek, white and light green parts only, sliced
6-10 small carrots, peeled and sliced
4 cloves of garlic
4 stalks of celery, sliced
1 small head of green cabbage, chopped
2 cups of bone broth
4 cups of beef broth or chicken broth (I prefer beef)
1/2 T to 1 T of Italian seasoning
2 bay leaves
Salt and pepper to taste
Brown sausage, stirring and flipping for 8 minutes, until sausage is light brown. Remove sausage from the pan.
Add olive oil, leeks, carrots, and celery to the same pan. Saute for 5 minutes, stirring all together. Then add the cabbage and garlic and saute for 4 additional minutes, stirring occasionally.
Add both liquids, seasoning, bay leaves, cooked sausage. Stir to combine. Continue to cook all together until the soup comes to a light boil. Then, reduce heat to medium low and simmer for 30 minutes.
You can add the additional Italian Seasoning (1/2 T) if needed, plus salt and pepper to taste.
